Bailey’s and Orange Cupcakes with Bailey’s Buttercream

I had my first order for a batch of cupcakes over the weekend! So exciting! I was given one item on the specification- It had to be christmassy!

I decided to find a recipe with Bailey’s in it and conveniently found a recipe on the Bailey’s website.

Every single cupcake turned out identical. They all rose beautifully as well! In comparison to some of the other recipes I use, it’s a little bit drier (not necessarily a bad thing) which meant there was a crunchy outer layer which gives a really nice bite, but means you need to have a really creamy and rich buttercream! The citrus flavour from the orange combines with the alcohol in the baileys and creates ‘subtle’ kick.

For the Bailey’s  buttercream, I used a video on Youtube- my favourite kind of recipe method as you can watch them do it too and know exactly what to look for!

The recipe was :

1/2 Cup (113g) Butter

4 Cups (280g) Icing Sugar

3-4 Tablespoons of Baileys

  • Cream the butter.
  • Add about 1/3 of the icing sugar and mix. Add a tablespoon of Baileys and mix.
  • Keep alternating with the rest of the icing sugar and Baileys.
  • When you’ve finished,  if your buttercream is too solid, add more Baileys to loosen it up and if it’s too runny, add more icing sugar.
